Chocolate Haupia Pie instructions

  1. preheat oven to 350.
  2. combine milk, coconut milk, sugar & extract in a pan, bring to a boil then a low simmer.
  3. combine water & starch in a separate bowl.
  4. slowly add the starch mix to the pan.
  5. melt the chocolate in the microwave.
  6. separate the cream mixture in half. add melted chocolate to one half.
  7. add the chocolate mix to the crust,, then the other half as a second layer..
  8. refrigerate for 5-8hrs to set..
  9. top with whipped cream & chocolate shavings.

You can use a gluten free graham cracker recipe to keep the crumb crust. Or, use a standard store bought or homemade gluten free pie crust. Substitute any type of chocolate you'd like for the chocolate layer of the pie. Mix remaining half with the melted chocolate and pour in bottom of pie crust; pour reserved half on top of chocolate layer. Cover and refrigerate for about an hour.
